Skillet-Baked Salmon with Lemon Butter

A quick weeknight salmon dinner finished with a bright lemon butter pan sauce.

Ingredients

  • 4 salmon fillets (about 6 oz / 170g each), skin on
  • 2 tbsp (27g) olive oil
  • Salt and freshly ground black pepper
  • 3 tbsp (42g) unsalted butter
  • 2 cloves (6g) garlic, minced
  • 1 (100g) lemon, half juiced and half sliced
  • 2 tbsp (8g) chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the salmon fillets dry and season both sides with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the salmon skin-side down for 3-4 minutes, until the skin is crisp.
  4. Flip the fillets and transfer the skillet to the oven. Bake for 8-10 minutes, until the salmon flakes easily with a fork.
  5. Remove the skillet from the oven (careful, the handle is hot) and set the salmon aside on a plate.
  6. Return the skillet to low heat, melt the butter, and add the garlic. Cook for 30 seconds until fragrant, then stir in the lemon juice.
  7. Spoon the lemon butter sauce over the salmon, top with lemon slices and parsley, and serve.
